Easy Chicken Enchilada Recipe

Mexican food is delicious any day of the week, and this chicken enchilada recipe is easy enough that you could make it every day!

Prep Time: 15 minutes
Cook time: 35 minutes
Yield: 4 to 6 servings

Ingredients:
- 2 cups cooked and diced chicken
- 1 can of cream of chicken soup
- 2 cups shredded cheddar cheese
- 8 10-inch flour tortillas
- 1 tbs. butter
- ½ onion diced
- 1 ½ cups sour cream
- ½ cup green onions
- 1 tbs. chili powder
- 1 can chopped green chili peppers, drained

Instructions:

Preheat oven to 350˚ and lightly grease a large baking dish. In a pan, melt the butter and sauté onion and chili powder. Add the chicken, soup, 1 cup of cheese, 1 cup of sour cream, and chili peppers. Scoop an even amount of mixture into each tortilla and place in baking dish with the seam side facing down. Sprinkle the remaining cup of cheddar cheese over the top of the tortillas and bake for 25 minutes. Let cool for 10 minutes before serving. Top with extra sour cream and green onions.

Easy Chicken Enchilada Soup Recipe

Sometimes you crave soup, but you're also craving enchiladas. This simple recipe gives you the best of both worlds!

Prep Time: 15 minutes
Cook time: 45 minutes
Yield: 4 servings

Ingredients:
- 1 pound boneless skinless chicken breasts
- 1 tbs. vegetable oil
- ½ cup diced onion
- 1 quart chicken broth
- 1 cup masa harina
- 2 cups of water
- <1 garlic clove, minced/span>
- 1 tsp. salt
- 1 tsp. chili powder
- 1 cup of corn kernels
- 1 cup of canned black beans
- 1 cup half and half
- 1 can enchilada sauce
- 2 cups shredded cheddar cheese
- 1 bag of tortilla chips

Instructions:

In a pot, sauté chicken breasts in the vegetable oil until they are thoroughly cooked. Set aside and let cool, and then shred. Cook the onion and the garlic in the remaining oil and add chicken broth. In a bowl, mix the masa harina and 2 cups of water. Add mixture to the pot, along with chili powder, enchilada sauce, beans, corn, 1 cup of cheese and half and half. Add the shredded chicken back to the pot, and let simmer at a low heat for 25 minutes. Serve in bowls and top with remaining cheddar cheese and serve with tortilla chips.

Easy Chicken Enchilada Casserole Recipe

This is a classic recipe that will satisfy your craving for an excellent enchilada meal.

Prep Time: 30 minutes
Cook time: 30 minutes
Yield: 5 servings

Ingredients:
- 3-4 small chicken breasts
- 1 can cream of chicken soup
- 1 can diced green chilies
- 4 cups shredded cheddar cheese
- Garlic salt to taste
- 1 container sour cream
- 1 can diced tomatoes
- 10 6-inch flour tortillas
- ½ cup chopped green onions

Instructions:

Preheat oven 350˚ and lightly grease a baking dish. Season chicken breasts with garlic salt and place in the dish and bake for 45 minutes. Let chicken cool, then shred it and set it aside. In a large bowl, combine, tomatoes, chicken soup, green chilies, and half of the container of sour cream. Add chicken to the mixture. Cover the bottom of the baking dish with some of the tortillas. Add chicken mixture. Add cheese. Continue to layer with the remaining ingredients. Bake in the preheated oven for 30 minutes. Let cool and serve with sour cream and green onions.
